Crossbill Highland Distilling
Crossbill Gin is a celebration of juniper and rosehip, two bold and fresh Highland botanicals. Made using only 100% Scottish hand picked botanicals, we have re-established a long lost tradition of harvesting Scottish juniper. We believe this creates a distinct taste evocative of the ancient pine forests where juniper has grown for centuries.
Scottish Juniper – a return to tradition
In the 18th century Scotland’s fragrant juniper was exported to Holland to produce Jenever (gin's great, great grandfather). This tradition died out 200 years ago but Crossbill’s founder Jonathan was captivated by the idea of reviving Scottish juniper harvesting to produce a new gin.
From dream to reality...
Whilst searching for ancient juniper growing in forests and glens, we spent time perfecting a technique for distilling the Scottish variety. We understand the importance of supporting a sustainable wild juniper supply, and only release small batches, in harmony with the way the juniper is growing. Each batch is as distinct as the harvest that is picked by hand. Every temperature change, every drop of rain is captured to create a truly unique taste.

We continue to explore different juniper forests to bring you exciting new batches, all unique in response to their surroundings.
And we named our gin after the Scottish Crossbill - a native bird which, like our juniper supply, can only be found in the ancient Caledonian pine forests of Scotland.
Crossbill wouldn’t be here without the support of our beloved customers – the connoisseurs of Crossbill Gin, and the help of Plant Life Scotland and the Forestry Commission. Now many other small gin producers have started using Scottish juniper, truly re-invigorating a long lost tradition.
