Batch 3 has been picked distilled and bottled and will be ready for shipping from Monday 2nd November.

This year weather has remained  good we managed to continue our early juniper pick starting  5th September way into October. Again Batch 3 was vatted with the rosehip, picked at the same time, for 10 days then double distilled as it was warm quite outside (09 Degrees, batch one was -14 ) which meant the gin flowed through the still faster than usual so again ran it through twice to capture as much flavour as possible.  On this batch we also tried to limit the amount of time from the berries being picked to going in the still. We picked for two hrs in the morning then came back washed, graded and added to the spirit in the still, meaning  the time between picking and production was between 5mins and two hours 15 mins. We did the same in the afternoon. We also add some juniper wood and needles to the batch but remove before distillation,  It was distilled on the 9th October, in our Bain Marie copper pot still which allows us to leave the berries and rosehip in throughout the heating process & bottled on the 21st October.
