This Spring edition brings together the pleasantly aromatic, aniseed-like sweetness of Sweet Cicely with the tart, refreshing brightness of Rhubarb. These vibrant flavours are grounded by the herbaceous, earthy character of wild Nettle, all foraged from the Scottish West Coast.
Featuring Sweet Cicely, Nettle, and Rhubarb alongside our signature Scottish Juniper and Rosehip, this vibrant gin captures the essence of spring in bloom.
These botanicals were harvested with care and precision by the expert foragers at Coeur Sauvage, who specialise in sustainable wild sourcing across Scotland. Each ingredient is selected at its seasonal peak, ensuring both quality and environmental responsibility while showcasing the natural abundance of the Scottish landscape.
Tasting Notes
Nose: Fresh and green with notes of nettle, softened by a hint of sweet spice in the background
Palate: Opens with the natural sweetness of sweet cicely, delivering soft, liquorice-like flavours with aniseed warmth, followed by the earthy green, leafy character of nettles, adding an herbaceous depth

BOTANICALS
Sweet cicely is a delicate, feathery-leaved herb with umbrella-like clusters of tiny white flowers, often found in woodlands and hedgerows. Closely related to fennel and anise, it has a naturally sweet, aromatic flavour reminiscent of liquorice sweets, with soft notes of aniseed and mild spice.
Nettle is a hardy, green-leaved plant covered in fine stinging hairs, commonly found in wild meadows and woodland edges across Scotland. Once carefully harvested and processed, it reveals a clean, earthy flavour with grassy, slightly peppery notes, bringing a savoury depth that complements both herbal and citrus botanicals.
Rhubarb is easily recognised by its vibrant pink-red stalks and large green leaves, though only the stalks are used due to their tart, tangy flavour. A longtime favourite in both kitchens and distilleries, rhubarb adds a bright, crisp acidity and subtle sweetness that brings lively balance to botanical blends.
