TWO BOTANICALS

We harvest our botanicals by hand in the Scottish Highlands, using a traditional method that dates back to the creation of gin. While showing care and consideration to the surrounding plants and wildlife, we help to ensure the regeneration of the Juniper bushes for the following years’ harvests.

Most gin makers import dried farmed botanicals and use between five and fifteen botanicals in their gins. By comparison, we use two botanicals, wild Scottish juniper and wild Scottish rosehip, handpicked and fresh.

Wild Scottish Juniper

Common Juniper is a native evergreen shrub that grows in wild clusters alongside heather in the remote and rugged moorlands of the Scottish Highlands.

In the 17th century, juniper was one of Scotland’s largest exports, sent mainly to Holland for the production of genever, the forefather to gin.

Scottish juniper was once used widely by UK distilleries to make gin, but through a combination of historic over harvesting and mis-management juniper is now considered to be one of the rarest plants in Britain.

We have returned to tradition, harvesting Scottish juniper and working with land owners and conservation organisations to maintain a sustainable source of juniper for future generations.

Wild Scottish Rosehip

Rosehip is the fruit of the rose plant, the rounded part of the flower just below the petals, and begins to form after pollination in late spring and ripens over summer.

Rosehip grows wild across Scotland and in the sheltered parts of the Highland moorlands alongside our juniper. We harvest by hand in early autumn before and after the first frost, when the rosehip is deep red in colour and the fruit is soft and ripe.

Fresh rosehip adds a delicate sweet flavour to compliment the fresh juniper in Crossbill gin.


 

SEASONAL RANGE

Crossbill’s Seasonal Range of small-batch gins is a showcase of the amazing ingredients available on our doorstep throughout the year, with every botanical sustainably hand-gathered from Scotland. As the botanicals for each batch are only picked in their peak season, when they're gone, they're gone!

From the rich abundance of summer fruits to the coldest and most bleak wintertime treasures, we are hoping to showcase that incredible flavours can be found in Scotland all around the year.

 
 
 

 

SERVING SUGGESTIONS AND COCKTAILS

Our gins have a refined yet bold taste with unequalled freshness and as such we prefer to keep our serves simple. We suggest you serve over ice with a naturally light tonic. If you prefer to add a garnish, why not squeeze a twist of orange zest on the surface to release a burst of the natural oils, then garnish with the twisted peel.
